Anti-cancer Superfood Snack Recipe: Coconut Spirulina Bar

At Hope4Cancer, we are always seeking ways to get “superfoods” into our meals for our patients. An excellent, high-quality ingredient that’s packed with anti-cancer properties is spirulina. It’s a form of blue-green algae that grows in warm, fresh water bodies. As reported by Dr. Mercola, spirulina nourishes the body “by providing most of the protein you need to live, helping prevent the annoying sniffling and sneezing of allergies, reinforcing your immune system, helping you control high blood pressure and cholesterol, and helping protect you from cancer.”

As part of the snack offerings at our Juice Bar, we offer these tasty Coconut Spirulina Bars along with dried vegetables and fruit and flax crackers. Give these bars a try and let us know how you like the recipe. You’ll need a dehydrator to make them, but you can find inexpensive ones on Amazon.com or at specialty kitchen stores.

Ingredients:

3 cups dried, shredded, organic, unsweetened coconut

3 organic apples, cored and rough chopped

5-6 dried white figs or dates (pitted)

1/4 cup organic spirulina powder

Kelp granules – 1/4 tsp. per bar

Preparation:

  1. In a food processor, mix cored apples and dried figs/dates.
  2. Mix coconut and spirulina powder in a separate bowl, then combine with the apple-fig mixture until well mixed.
  3. Spread mixture on a teflex sheet to 3/8 inch thickness.
  4. Cut into desired shapes (a rolling pizza cutter works well).
  5. Sprinkle 1/4 tsp. of kelp granules per bar and press down.
  6. Place bars in dehydrator and let dry at 105 degrees until top is dry. Usually about 12 hours.
  7. Remove bars from teflex sheet and turn them over onto the dehydrator tray.
  8. Place bars in dehydrator again and continue drying until bar is chewy (not too soft, not too hard).

Variation:

Make round cookies instead of bars by rolling the dough for each serving into a ball and flattening before placing on the teflex sheet.
