Recipe: A Taste of Mexico in Delicious Vinaigrette

At Hope4Cancer, we take extreme pride in the location of our clinics. Our flagship site is located in Baja California, Mexico, just south of San Diego and nestled right across the road from an expansive boardwalk and beautiful beach. Cultural experiences abound: You can take in some music from a mariachi band, shop the wares from street vendors, sample coconut water or simply enjoy the sunset over the Pacific Ocean.

We’ve also just opened a brand new clinic in Cancun! The building’s beauty combined with the sweeping ocean views are enough to take your breath away.

To celebrate Hope4Cancer’s home country of Mexico, I want to share this recipe for Mexican Vinaigrette, which adds a nice kick to any salad! Full of healing ingredients like apple cider vinegar, garlic and lemon juice, the added spices may also make this dressing the most interesting part of your meal.

Mexican Vinaigrette Dressing

Ingredients:

  • 2/3 cup olive oil
  • 4 tablespoons apple cider vinegar
  • 3 teaspoons fresh-squeezed lemon juice
  • 1 clove garlic (diced)
  • 1 teaspoon jalapeño (diced)
  • 2 dates (pits removed)
  • 1 tablespoon fresh cilantro (chopped)
  • 1 teaspoon minced onion
  • 1/2 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon sea salt

Preparation:

  • Add all ingredients to your blender.
  • Blend to a smooth consistency.
  • Serve chilled!
