Recipe: Fresh Guacamole

Summer is here, and that means plenty of backyard potluck barbecues. It’s not always easy to eat healthy at parties like these, with many dishes covered in mayo or laden with sugar. But fresh, nutritious guacamole is a choice that will make you the talk of the block party.

One reason guacamole is always a hit is its simplicity: it doesn’t take a lot to make a great guacamole. With only a few ingredients, it’s a dish that’s easy to prepare. Avocados are a good source of vitamin E and healthy fat too.

Here’s a helpful tip — after mashing the avocado, don’t toss that seed! Keep the seed (sometimes called the pit) in the bowl to prevent the guacamole from browning.

Serve the guacamole with a bright crudite plate. Crunchy carrot sticks, flavorful red and yellow bell peppers, fresh peapods, cucumber slices, celery sticks . . . the options are endless, and the variety means there’s something for everyone. There’s nothing like a big bowl of guac to please a crowd!

Fresh Guacamole

Serves 4-6 as a side

Ingredients

  • 3 ripe avocados, halved
  • 3 lime, halved
  • 3/4 cup diced plum or vine-ripe tomatoes
  • 6 tablespoons chopped cilantro
  • 3 small garlic cloves, minced
  • Sea salt, to taste (About 1/4-1/2 teaspoon large-flake sea salt)

Instructions

  1. Scoop the flesh of the avocado into a small bowl.
  2. Juice either 1/2 to 1 lime over the avocado. Use the back of a fork to mash the avocado and lime juice together.
  3. Add the tomatoes, cilantro and garlic to the bowl and gently fold into the avocado mixture.
  4. Season with sea salt, to taste.
